Instructions
Step 1: Prep
Preheat oven to 425 degrees.
Rinse, trim, and thinly slice mushrooms.
Thinly slice scallion whites.
Heat a drizzle of oil in a large pan on stove top over medium-high heat.
Lightly oil a baking sheet.
Step 2: Wrap Chicken
Pat chicken dry with paper towels.
Lay two slices of prosciutto side-by-side on a flat surface.
Tightly roll prosciutto around each chicken breast.
Step 3: Sear Chicken
Place wrapped chicken in preheated pan.
Sear until brown, roughly 2 minutes per side.
Place seared chicken on oiled baking sheet.
Step 4: Roast Chicken
Place seared chicken in preheated oven.
Allow to cook for 12 minutes and use instant read thermometer to check internal temp.
Roast until internal temp reaches 160 degrees.
Step 5: Make Mushroom Sauce
While chicken roasts, make mushroom sauce.
In pan used to sear chicken, add a drizzle of oil.
Add sliced mushrooms and sliced scallion whites to preheated pan.
Season with salt and pepper.
Cook, stirring occassionally, until mushrooms have softened, rogyhly 3-4 minutes.
Add mushroom or chicken stock to cooked mushrooms.
Allow stock to reduce for 5-10 minutes.
Remove pan from heat.
Add 2 tablespoons sour cream.
Add 1 tablespoon butter.
Taste add salt or pepper.
Step 6: Finish Chicken
Once chicken has reached 160 degrees internal temp, remove from oven and remove from sheet pan.
Allow chicken to rest on a cutting board for at least 5 minutes.
Slice chicken into 1/2 thick slices.
Place chicken on plate.
Spoon mushroom sauce over sliced chicken.
