Sirloin with Cherry Balsamic Sauce

Cherry Preserves 2 Tablespoon
Dried Cherries 1 Ounce
Beed Demi-Glace 1 Unit
Balsamic Vinegar 2 + 1/2 Tablespoon

Instructions

Step 1: Prep
  Trim and thinly slice scallions, separating whites from greens.

Step 2: Cook Steak
  Pat steak dry with paper towels.   Season all over with salt and pepper.
  Heat a drizzle of oil in a large pan over medium-high heat.
  Add steak and cook to desired doneness, 3-6 minutes per side.
  Turn off heat; transfer to a cutting board to rest.

Step 3: Make Sauce
  Heat a drizzle of olive oil in same pan over medium-high heat.
  Add cherries and cook until slightly softened, 30 seconds.
  Stir in:
    - Jam
    - Demi-glace
    - Remaining vinegar
    - 1/4 cup water
    - Any resting juices from steak
  Simmer until thickened, 3-5 minutes.
  Turn off heat and stir in 1 TBSP butter until melted.
  Season with pepper.

Step 4: Finish and Serve
  Slice steak against the grain.
  Divide steak between plates.
  Spoon sauce over steak.
  Sprinkle with remaining scallion greens and serve.
