Seared Sirloin Steak and Demi Glace Sauce

Sirloin Steak 16 Ounce
Shallot 1 Each
Beef Stock Concentrate 1 Unit
Butter 1 Tablespoon

Cook time: 25 Minutes

Instructions

Step 1: Prep
Halve, peel, and thinly slice shallot.
Mince a few slices until you have 3 TBSP minced shallot.

Step 2: Cook Steak
Pat steak dry with a paper towel, then season all over with salt and pepper.
Heat a drizzle of oil in pan over medium-high heat.
Add steak and cook to desired doneness, 4-8 minutes per side.
Turn off heat.
Remove steak from pan and set aside to rest for 5 minutes.
Rinse and wipe out pan.

Step 3: Make Sauce
Heat 1 TBSP butter in same pan over low heat until melted.
Add minced shallot and cook until softened, 1-2 minutes.
Stir in demi-glace and 1/4 cup water.
Simmer until slightly thickened, 1-2 minutes.
Turn off heat.
Stir in 1 TBSP butter and any resting juices from steak.
Season with salt and pepper

Step 4: Plate and Serve
Slice steak.
Drizzle with shallot sauce over steak.
Serve.
