Instructions
Step 1: Prep
Preheat oven to 425 degrees fahrenheit.
Trim, peel, and cut carrots on a diagonal into 1/2-inch-thick pieces.
Toss on a baking sheet with a large pinch of salt, pepper, a large drizzle of olive oil and optional additional seasonings such as:
- Italian Seasoning
- Chili Flakes
Step 2: Roast
Roast on top rack, flipping halfway through, until lightly browned and tender, 20-25 minute.
Step 3: Finish and Serve
Divide carrots between plates .
