Middle Eastern Steak and Rice Pilaf

Middle Eastern Spiced Steak 9 Ounce
Persian Cucumber 1 Each
Garlic 1 Clove
Lemon 1 Each
Basmati Rice 1/2 Cup
Chicken Stock Concetrate 1 Unit
Yogurt 8 Tablespoon
Sour Cream 2 Tablespoon
Sliced Almonds 1/2 Ounce
Chili Flakes 1 Teaspoon
Butter 1 Tablespoon

Prep Time: 5 Minutes
Cook time: 25 Minutes

Instructions

Step 1: Prep
Trim and grate cucumber on largest holes of box grater.
Peel and mince or grate garlic.
Quarter lemon.

Step 2: Cook Rice
Meanwhile, heat a drizzle of olive oil in a small pot over medium-high heat.
Reserve a pinch of garlic for tzatziki.
Add remaining garlic to pot.
Cook until fragrant, 30 seconds.
Stir in:
- Rice
- 3/4 cup water
- Stock Concentrate
- Big pinch of salt.
Bring to a boil.
Cover and reduce to a low simmer.
Cook until rice is tender, 15-18 minutes.
Keep covered off heat until ready to serve.

Step 3: Make Tzatziki
While rice cook, in a small bowl, combine:
- Yogurt
- Sour cream
- Half of the cucumber
- Juice from 1 lemon wedge
- Big pinch of salt.
Stir in reserved garlic if desired.

Step 4: Cook Steak
Season steak with salt and pepper.
Heat drizzle of olive oil in large pan over medium-high heat.
Add steak and cook until browned on first side, 4-7 minutes.
Flip, reduce heat to medium, and cook until browned and cooked to desired doneness, 4-7 minutes more.
Transfer to cutting board to rest.

Step 5: Finish and Serve
Fluff rice in a fork and stir in 1 Tbsp butter.
Divide between bowls.
Slice steak against the grain and arrange on top of rice.
Top with tzatziki and almonds.
Sprinkle with chili flakes if desired.
Serve remaining lemon wedges on the side.
