Melty Monterey Jack Burgers

Instructions

Step 1: Prep
Adjust rack to top position and preheat oven to 450 degrees.
Wash and dry all produce.
Mince or grate 2 cloves garlic.
Halve, peel, thinly slice onion.

Step 2: Make Garlic Mayo
In a small bowl, combine:
- Mayonnaise
- As much garlic as you like
- Salt
- Pepper
Set aside.

Step 3: Make Onion Jam
Heat a drizzle of oil in large pan over medium heat.
Add onion and cook, stirring occasionally, until browned and softened 8-10 minutes.
Stir in vinegar and 1 tsp sugar.
Cook until caramelized and jammy, 2-3 minutes.
Season with salt and pepper.
Turn off heat.
Transfer to a small bowl.

Step 4: Cook Patties
Shape beef into 2 equal-sized patties, each slightly wider than the burger bun.
Season with salt and pepper.
Heat a drizzle of oil in pan used for onions over medium-high heat
. Add patties and cook until almost to desired doneness, 3-5 minutes per side.
After 1 side is cooked, flip.
Top each patty with Monterey jack cheese.
Cover pan until cheese melts and patties reach desired doneness.

Step 5: Finish and Serve
Halve and toast buns in pan used for burgers.
Spread buns with ketchup and remaining garlic mayo to taste.
Fill with patties and as onion jam as you like.
