Notes
Do not use a loaf pan. This will cause the meatloaf to steam and become soggy.
Instructions
Step 1: Prep
Preheat oven to 350 degrees.
Line baking pan with tin foil and spray with cooking spray.
Dice onion.
Chop parsley.
Step 2: Cook Onion
Cook onions in butter over medium low heat until tender.
Allow to cool completely.
Step 3: Combine Ingredients
In a medium bowl, combine:
- Eggs
- Milk
- Breadcrumbs
Let sit for 5-10 minutes.
Add:
- Ground Beef
- Cooked Onions
- Ketchup (1 Tablespoon)
- Chili Sauce (1 Tablespoon)
- Italian Seasoning
- Parsley
- Salt
- Pepper
- (Optional) Worcestershire Sauce or Dijon Mustard
Mix until just combined.
Avoid overmixing.
Step 4: Form Loaf and Bake
Form mixture into 8” x 4” load on tin foil lined baking tray.
Bake at 350 for 40 minutes.
Step 5: Apply Sauce
While baking, combine 3/4 Cup Chili Sauce with 3/4 Cup Ketchup (and optional brown sugar).
Spread mixture/sauce over meatloaf.
Bake for additional 10-15 minutes.
Broil for 1-2 minutes optional.
Remove from oven and let rest 10 minutes before slicing.
