  Prep Time: 10 Minutes

Notes
  Do not use a loaf pan. This will cause the meatloaf to steam and become soggy.

Instructions

Step 1: Prep
  Preheat oven to 350 degrees.
  Line baking sheet with tin foil and lightly oil.
  Dice 1 onion.
  Chop parsley.

Step 2: Cook Onion
  All onion and 1 Tablespoon butter to sauce pan on medium het.
  Cook onions in butter over medium heat until tender, roughly 10-15 minutes.
  Place cooked onion in separate bowl.
  Allow to cool completely in fridge or freezer.
  While onion cools, start combining other ingredients.

Step 3: Combine Ingredients
  In a medium bowl, combine:
    - Eggs
    - Milk
    - Breadcrumbs
  Let sit for 5-10 minutes.

  Add:
    - Ground Beef
    - Cooked Onions
    - Ketchup (1 Tablespoon)
    - Chili Sauce (1 Tablespoon)
    - Italian Seasoning
    - Parsley
    - Salt
    - Pepper
    - (Optional) Worcestershire Sauce or Dijon Mustard
  Mix until combined.
  Tip: Wet hands slightly with cold water if mixing by hand.
  Overmixing is okay, but will make the loaf denser.

Step 4: Form Loaf and Bake
  Form mixture into 8” long x 4” wide load on tin foil lined baking tray.
  Tip: Wet hands with cold water before handling beef mixture.
  Bake on top rack at 350 for 40 minutes.

Step 5: Apply Sauce
  While baking, combine 3/4 Cup Chili Sauce with 3/4 Cup Ketchup (and optional brown sugar).
  Spread all of the mixture/sauce over meatloaf.
  Bake for additional 10-15 minutes.
  Broil for 1-2 minutes optional.
  Remove from oven and let rest 10 minutes before slicing.
