Lemon Butter Trout

Trout 10 Ounce
Fry Seasoning 1 Tablespoon
Stock Concetrate 1 Unit
Olive Oil
Lemon 1 Each
Salt
Pepper

Total Time: 35 Minutes
Prep Time: 5 Minutes
Cook time: 30 Minutes

Instructions

Step 1: Prep
Adjust rack to top position and preheat oven to 450 degrees.
Wash and dry produce.
Zest and Quarter lemon.

Step 2: Cook Fish
Pat Trout dry with paper towels.
Rub fillets all over with drizzle of olive oil.
Season generously with Salt and Pepper.
Rub flesh side of fillets with Fry Seasoning.
Place filles on lightly oiled baking sheet.

Step 3: Roast Fillets
Roast Trout on top rack until opaque and cooked through.
10-12 minutes.

Step 4: Make Sauce
In a small bowl, combine:
Stock Concentrate
- Squeeze of Lemon Juice
- Half the Lemon Zest
- 1/4 Cup of Water
Heat a medium, dry pan over medium-high heat.
Pour sauce mixture into pan.
Bring to a boil and cook until slightly thickened, 2-3 minutes.
Turn off heat.
Stir 2 Tablespoons of Butter into Sauce until melted.
Taste and adjust seasoning with Salt, Pepper, Lemon Juice.

Step 5: Finish and Serve
Divide Trout between plates.
Top fish with Sauce.
Serve with remaining Lemon wedges on the side.
