Instructions
Step 1: Prep
Preheat oven to 400 degrees fahrenheit.
Allow 4 ounces of cream cheese to soften at room temp.
Shred 4 ounces of cheddar cheese.
Slice jalapenos in half length wise.
Using a small spoon, remove seeds and ribs from inside jalapeno halves.
Optional Step: Prep Breadcrumbs
If using panko breadcuumbs, mix with melted butter.
Add 1/4 cup of panko breadcrumbs to a small bowl.
Add 1 tablespoon of butter to a small pot on stovetop over medium heat.
Allow butter to melt.
Remove pot from heat.
Using a fork, mix melted butter into breadcrumbs
Optional Step: Toast Garlic
If using garlic, toast on stovetop.
Preheat pan on stovetop over medium heat.
Melt 1/4 tablespoon butter in preheated pan.
Stir in 1 crushed clove of garlic.
Cook, stirring, until golden brown.
Remove from heat and place in a bowl for next steps.
Step 2: Make Filling
Add shredded cheese and cream cheese to a small bowl.
Add optional additional ingredients such as toasted garlic.
Mix to combine everything.
Step 3: Fill Jalapenos
Fill each jalapeno half with cheese filling.
Optional Step: Sprinkle with Breadcrumbs
Add breadcrumbs to each filled jalapeno half.
Step 4: Wrap Filled Jalapenos
Wrap each jalapeno half in 1 piece of bacon.
Add toothpicks to keep the bacon in place.
Note: It may be easier to slice bacon in half before wrapping (1/2 slice per jalapeno half).
Step 5: Bake
Line a baking sheet with tinfoil and a wire rack.
Add jalapenos to wire rack.
Bake at 400 until bacon is golden, roughly 25-30 minutes.
Step 5: Cool and Serve
Once bacon has crisped and is golden brown, remove from oven.
Optional: Sprinkle with chopped chives as a garnish.
Allow to rest for 5 minutes.
Remove toothpicks and serve.
