Notes:
Husks can be left on or removed.
Corn can be cut/shaved off of the cob after cooking and served in a bowl instead of being left on the cob.

Instructions

Step 1: Prep Grill
Preheat grill to medium heat (roughly 450-500 degrees).

Step 2: Prep Corn
While the grill preheats, prep the corn.
Cut back the stalk to a short length.
Pull back corn husks, leaving them attached at the base.
Remove silk and rinse corn cobs.
Tie the corn husks back inot a "ponytail" using a piece of cooking twine.
In a large bowl or sink, soak corn cobs and husks for 5 minutes.
Note: Soaking the corn cob and husk helps prevents the husks from burning.

Step 3: Oil Corn
Once grill has preheated, lightly brush corn cobs with a high smoke point oil (such as vegetable or sunflower).

Step 4: Grill Corn
Add corn to preheated grill and cook.
Turn every 2-3 minutes, creating a very light char on surface.
Grill 12-15 minutes.
Note: Overcooking and adding a dark char causes the corn to look good but will be dry.
Continue with next steps while the corn cooks.
Fully cooked corn should have a slight char on sections and the kernels should be a bright yellow.

Step 5: Prep Lime & Cheese
While corn cooks, zest and quater lime.
Grate or crumble cheese into a wide, flat dish that the corn can be rolled in.

Optional Step: Slice Corn into Pieces
Once corn has fully cooked, if the husk is removed, the ears of corn can be cut into 2 pieces each for smaller serving sizes.

Step 6: Melt Butter
Add butter to a heat proof dish and place on grill racks to melt.

Step 6: Garnish Corn
Using a brush, spread a layer of melted butter on corn.
Drizzle a corn with crema Mexicana.
Sprinkle or roll corn with crumbled pieces of Cotija cheese.
Sprinkle corn with salt.
Sprinkle corn with tajin.
Sprinkle corn with a squeeze of lime juice.

Optional Step: Add Additional Toppings
Sprinkle corn with lime zest.
Drizzle corn with hot sauce.
