Instructions
Step 1: Prep
Preheat oven to 400 degrees fahrenheit.
Peel potatoes.
Dice potatoes into 1"thick pieces.
Step 2: Boil Potatoes
Add potatoes to a large pot.
Fill with enough water to cover by 1".
Bring water to a boil.
Boil for 20 minutes to until potatoes can be easily pierced with a knife.
Step 3: Prep
Line a baking sheet with parchement paper or silicone pad.
Prepare a piping bag with a large star tip.
Using a ziplock bag with the corner cut is fine.
A star tip will allow edges on the final potatoes to get cripsy during baking.
Step 4: Drain and Mash Potatoes
Strain water from cooked potatoes.
Using a ricer, mash potatoes into a large bowl.
Step 5: Add Ingredients
In bowl with mashed potatoes, add:
- 4 Tablespoons Heavy Cream
- 4 Tablespoons Butter
- 3/4 Teaspoon Salt
- 3/4 Teaspoon Pepper
Mix ingredients.
Taste and adjust seasoning and heavy cream as needed.
Step 6: Add Egg Yolks
Cool potatoes slightly for 5 minutes.
Add egg yolks 1 at a time.
Fold egg yolks in until fully incorporated.
Step 7: Pipe Potatoes
Add potatoes to piping bag.
Pipe 3" wide swirls onto parchment (or silicone pad) lined baking sheet.
Swirls should be roughly 2" tall.
Step 8: Bake Potatoes
Place baking sheet into 400F oven.
Bake for 10 minutes.
Reduce temperature to 375F.
Bake for additional 8-12 mintues or until golden brown.
