Instructions
Step 1: Prep
Cut zucchini into 3-inch long pieces.
Halve each piece lengthwise.
Cut halves into thin wedges.
Step 2: Bake
In medium bowl, toss zucchini 1 TBSP mayo.
To bowl, add panko, oregano, salt and pepper until all wedges are evenly coated.
Spread out on a lightly oiled baking sheet.
Bake, tossing halfway through, until zucchini is tender and panko is golden brown, 14-16 minutes.
