Crack Chicken Sandwich

Dry Ranch Seasoning 2 Tablespoon
Sourdough Bread 4 Slice
Cream Cheese 4 Ounce
Bacon 2 Slice
Parmesan Cheese 2 Ounce

Notes:
This recipe works well with leftover roasted chicken (Costco prepackaged shredded chicken is especially good).

Instructions

Step 1: Soften Cream Cheese
Remove cream cheese from fridge and allow to soften at room temp.

Step 2: Cook Chicken
Using a pan sear, oven roast method, cook chicken.
Set oven to 375 degrees.
Heat a pan over medium-high heat.
Pat dry chicken.
Season liberally with salt and pepper.
Add a large drizzle of oil to preheated pan.
Sear chicken 2 minutes per side.
Add pan to oven.
Roast at 375 until internal temp reaches 160 (roughly 12 minutes).
Remove chicken from pan and allow to cool fully.

Step 3: Make bacon
While chicken cooks, use preferred method to make crispy bacon.
Cooking method recommended: Cold Oven

Step 4: Shred Chicken
Once chicken has cooled fully, shred into small pieces.

Optional Step: Chop Bacon
Chop bacon into small pieces or leave bacon as strips.

Step 5: Make Chicken Spread
To a large bowl add:
- Shredded Chicken
- Cream Cheese
- Ranch Seasoning
Taste and add additional ranch seasoning as needed.

Step 6: Crisp Bread
Heat a pan over medium-high heat.
Grate parmesan cheese until you have enough to cover 1 side of each slice.
Spread butter on 1 side of bread slices.
Sprinkle and press parmesan cheese into buttered side of bread.
Add a drizzle of oil to preheated pan.
Add bread sliced to oiled preheated pan, cheese side down.
Allow cheese to metl and crisp, roughly 2-4 mintues.
Remove from pan once cheese has crisped.

Step 7: Assemble Sandwich
Slice avocado.
Add chicken filling to non-cheese side of bread.
Add acovado over chicken.
Add bacon slices (or bits).
Add 2nd slice of crispy parmesan bread (cheese side on outside of sandwich).
