Chipotle uses Chicken Thighs.
Instructions
Step 1: Prep Marinade
Roughly chop 1/2 of red onion.
Peel 2 cloves of garlic.
Slice and juice 1 lime.
Into food processor (or large bowl for immersion blender), add ingredients:
- Onion
- Garlic
- Chipotle Pepper
- Adobo Sauce
- Vegetable Oil
- Lime Juice
- Oregano
- Cumin
Blend until smooth.
Season with Salt and Pepper.
Step 2: Marinade Chicken
Add chicken to a large ziplock bag.
Add marinade to bag.
Rub bag to coat all chicken with marinade.
Step 3: Marinate
Allow marinated chicken to rest in fridge for at least 2 hours.
Step 4: Preheat Grill
Turn on grill and allow to preheat.
While brill preheats, remove chicken from fridge and allow temp to rise to room temp.
Step 5: Cook Chicken
Add chicken to preheated grill.
Maintain grill temp of ~425 degrees.
Cook until internal temperature reaches 160 degrees (roughly 10 minuntes per side).
