Instructions
Step 1: Prep
Adjust rack to top position and preheat oven to 450 degrees.
Wash and dry produce.
Quarter lemon.
Step 2: Make Lemon Creme Freiche
In a small bowl, combine:
- Creme Fraiche
- Squeeze of Lemon Juice
- Salt
- Pepper
Step 3: Make Glaze and Coat Fish
In a second small bowl, combine:
- Brown Sugar
- Paprika
- Dijon Mustard
- Olive Oil (1 teaspoon)
- Juice from 1 lemon wedge
- Big pinch of Salt
- Big pinch of Pepper
Pat Trout dry with paper towels.
Place skin sides down on oiled baking pan.
Evenly spread tops of Trout with Brown Sugar Dijon Glaze
Step 4: Roast Fish
Roast on fish on backing sheet on top tack until Trout is cooked through.
10-12 minutes.
Step 5: Finish and Serve
Divide Trout between plates.
Top fish with Lemon Creme Fraiche.
Serve with remaining Lemon wedges on the side.
