Notes:
  Cooking vegetables and meats separate ensures propper cooking time for each item.
  Add a small amount of salt during cooking steps to avoid over-salting with added ingredients.

Instructions

Step 1: Prep Pots and Pans
  Prep cooking pots and pans on stove top.
  1 sauce pot that combined ingredients will be added to.
  1 stainless steel pan to sear vegetables and meat in.
  1 large pot of water to boil pasta.

Step 2: Blend Peeled Tomatoes
  Empty can of peeled tomatoes into a large metal bowl.
  Using immersion blender, blend peeled tomatoes into a smooth sauce (roughly 2 minutes).
  Add blended tomoatoes to sauce pot.
  Tomatoes will cook down and water will cook off.
  Add optional chicken stock or chicken broth to sauce pot.

Step 3: Add Seasoning to Sauce Pot
  Add Italian seasoning to sauce pot.
  Add bay leaf to sauce pot.
  Add a pinch of salt to sauce pot.

Step 4: Prep and Saute Onion
  Preheat stainless steel pan on medium heat on stovetop.
  Peel and dice onion into 1/8-inchde cubes.
  Add oil to preheated pan.
  Add onion to preheated pan with oil.
  Add a pinch of salt to onion.
  Saute until translucent (roughly 5-10 minutes).
  Add sauted ontion to sauce pot with tomatoes.
  Wipe out pan and return to stovetop on medium heat.

Step 5: Cook Garlic and Optional Mushrooms
  Rince and slice optional mushrooms into 1/8-inch slices.
  Peel and slice garlice cloves into slices as thin as possible.
  Add oil to preheated stainless steel pan.
  Add garlice to pan with oil.
  Saute briefly (1-2 minutes).
  Add mushrooms to pan with garlic.
  Add a pinch of salt to pan.
  Cook mushrooms until softened and water has evaporated (roughly 10-15 minutes).
  Add mushrooms and garlic to sauce pot.
  Wipe out pan and return to stovetop at medium heat.

Step 6: Add Wine to Sauce
  Add red wine to sauce pot.

Step 7: Prep and Saute Vegetables
  Peel and dice carrot into 1/8-inch cubes.
  Rinse and slice celery in half length wise.
  Slice celery into 1/8-inch slices.
  Add oil to preheated stainless steel pan.
  Add sliced carrot and celery to stainless steel pan.
  Add a small pinch of salt to pan.
  Saute until softened slightly (4-5 minutes).
  Add vegetables to sauce pot.
  Wipe out pan and return to stovetop on medium heat.

Step 8: Sear Beef and Tomato Paste
  Add oil to preheated stainless steel pan.
  Add ground beef to preheated pan.
  Add optional ground pork to pan.
  Press beef into pan.
  Allow beef to sear, unmoving, 3-5 minutes until browned on one side.
  Slide beef to edges of pan.
  Add tomato paste to center of pan.
  Mix beef into tomato paste.
  Continue cooking until beef has finished cooking.
  Add cooked beef to sauce pot.
  Add pinch of salt and pepper to sauce pot.

Step 9: Simmmer Sauce
  Allow sauce to simmer and reduce, uncovered, for at least 30 minutes up to 1 hour.

Step 10: Cook Pasta
  While sauce simmers, cook pasta following package instructions.
  Save 1/2 cup of pasta sauce

Step 11: Finish Sauce
  Add 1/2 cup of pasta water to sauce.
  Add 1 cup milk or 1/2 cup of whipping cream to sauce.
  Taste and add salt as needed.

Step 12: Preheat Bowls
  Add bowl or dish to oven set to 350 degrees to warm up (roughly 5-10 minutes).

Step 13: Serve
  Add cooked pasta to preheated dish.
  Add bolognese sauce over pasta.
