Beef Tenderloin with Mustard Sauce

Instructions

Step 1: Prep
  Halve, peel, and thinly slice scallion.

Step 2: Sear Beef
  Heat a large drizzle of olive oil in a large pan over medium-high heat.
  Pat beef dry with paper towels.
  Season all over with salt and pepper.
  Add beef to pan.
  Cook to desired doneness, 2-3 minutes per side (it’ll finish cooking in the next step).
  Transfer to a plate to rest.
  Wipe out pan.

Step 3: Roast Beef
  Transfer seared beef to one side of a baking sheet.
  Roast on top rack until beef reaches desired doneness, 10-12 minutes.
  Remove from oven.
  Let beef rest for 5 minutes.

Step 4: Make Pan Sauce
  Heat a drizzle of olive oil in pan over medium-high heat.
  Stir in 1/4 cup water and stock concentrate.
  Simmer until slightly thickened, 1-2 minutes.
  Reduce heat to low and whisk in mustard.
  Turn off heat; stir in sour cream and any resting juices from beef.
  Season with salt and pepper.
  TIP: If sauce gets too thick, stir in hot water 1 Tablespoon at a time.

Step 5: Finish and Serve
  Divide beef between plates.
  Top beef with pan sauce and serve.
  Sprinkle with remaining scallion greens and serve.
